Food & Wine Pairing – the new rules

Knowing what wine combines better with certain types of food can be a little tricky. There are varieties and quality of wines that it is difficult to find the right one.

Have you heard the typical phrase: “Fish goes with white wine and meats with red wine”? According to experts that phrase is no longer used. Why? This is due to the evolution of gastronomy, currently, dishes are made with other cooking techniques, flavors, and surprising combinations. For this reason, it is important to know the varieties of wine to be able to combine it with the correct food for each occasion.

There are still widespread ideas about how to accompany our meals. However, the choice, taste, and palate are very subjective, personal, even intimate. Experts often recommend a range of wines to accompany preferred foods. Among the tradition of classic wines, we can distinguish the following combinations:

Sparkling wine​- Is a good one during the summer, along with seafood, fish, or chicken.

White Wine​- Ideal to accompany fish. In addition, seafood, meats such as chicken and turkey. Among the most outstanding wines are Pinot Gris and Chardonnay.


Red Wine​- Ideal to accompany red meats and cheeses (manchego or gouda)

 Rose​ – Combine with fish, seafood, or desserts.
