Easy recipe: Energy bites without baking

Ingredients:

1 cup oatmeal (old- fashioned oats)

2/3 cup toasted coconut flakes

½ cup peanut butter

½ cup ground flax seed

½ cup chocolate chips or cacao nibs (optional)

1/3 cup honey or agave nectar

1 tablespoon chia seeds (optional)

1 teaspoon vanilla extract

Directions:

  1. Stir all ingredients together until they mix completely. Cover and put it on the fridge for 30 minutes.
  2. Roll into balls with the size of your preference. Store in an air-tight container and keep in the fridge for up to 1 week.
  3. Make 20-25 balls.

Note:

  • Different Chocolate: If you don’t want to use dark chocolate you can substitute it with any other kinds of chips (butterscotch, milk chocolate, white chocolate). If you are vegan, I recommend cacao nibs.
  • Different Nut Butter: If you are allergic to peanuts, you can substitute it with others kinds of nut butter (almond butter, sunflower seed butter)
  • Different Sweeteners: It is prefer honey but if you are vegan you can use alternative sweeteners too.
